The quinoa combined with the hearty veggies makes for a delicious, flavorful, yet healthy and guilt free yet entirely indulgent experience. SO MANY FLAVORS! I have been loving citrus vinaigrettes lately. The citrus and vinegar combo adds a nice tangy flavor to any salad. For this dressing, I used both orange and lemon for a slightly sweeter take. I have really started to like champagne vinegar for a little more depth of flavor. Apple cider vinegar would be fine too. Find the entire recipe below.
We used grilled chicken for our protein and added a layer of feta and a balsamic vinaigrette glaze in addition to the delicious citrus vinaigrette.
Spinach Quinoa Salad with Citrus Vinaigrette
A fresh and filling salad with a tangy, flavorful salad dressing. So much flavor, lots of healthy!
Ingredients
Citrus Vinaigrette Dressing
- 1 Orange
- 1 Lemon
- 2 tbsp Olive Oil
- 2 tbsp Champagne Vinaigrette (Apple Cider Vinegar is fine too)
- 1 tbsp Dijon Mustard (Or whatevs mustard)
- Salt & Pepper to taste
Quinoa
- 1 cup Quinoa (Prepare to package instructions- allow to cool before adding to salad)
Salad
- 10 Small sweet peppers Diced
- 1 Purple onion Diced
- 3 cups Fresh Spinach Chopped
- Feta Cheese To taste
- Balsamic vinegar To taste
Instructions
Citrus Vinaigrette Dressing

Juice the lemon and orange

Add champagne vinegar

Add Dijon mustard (or whatever …)

Grind salt and pepper (or sprinkle )

Whisk the dressing and enjoy!
Salad

Chop the red onion, peppers, and spinach into a bowl

Mix quinoa into the vegetable bowl after it cools off

Pour citrus vinaigrette over salad and mix

Add grilled chicken or whatever preferred protein

Top with feta cheese

Drizzle with Balsamic Vinegar
