Broccoli Cheddar Soup

Ingredients

  • 2 Tbsp salted butter
  • 3 Tbsp olive oil
  • 1 Tbsp all purpose flour
  • 1 onion, sliced
  • 3-4 cloves garlic
  • 1 can whole carrots
  • 2 heads broccoli chopped to bite sized pieces
  • 32 oz chicken broth
  • ½ cup *optional* whipping cream
  • 1 bag shredded cheese
  • 1 tsp salt
  • 1 tsp pepper

Instructions

  1. Preheat oven to 400° F

  2. Add butter to saute pan and melt

  3. Add sliced onions and garlic to saute pan

  4. Cook until onions are translucent

  5. While onions are cooking place bite sized chopped broccoli onto baking sheet and coat in olive oil

  6. Place baking sheet in oven. Roast broccoli at 400° until brown and tender

  7. Add can of carrots to saute pan

  8. Add flour and mix into saute pan coating vegetables

  9. Add chicken broth, allow to simmer

  10. Add roasted broccoli ( can also be steamed or boiled ) broccoli to mixture

  11. *Optional* Add heavy whipping cream- I didnt use it

  12. Add cheddar cheese and mix in once melted

  13. Salt and Pepper to taste

Hope you enjoy this cheesey, not so bad for you without the whipping cream soup. You could substitute the cream for a lower percentage milk or leave it out all together like I did. An immersion blender would also be a good possible addition to make it a smoother texture. I like the chunkier vegetables. Overall the soup was delicious, and what matters most, my kids actually ate it.
