If you are a fan of BIG flavor, this recipe is for you. These chicken burgers are oven baked so they are healthier than their oil-grilled counter parts. Because the recipe is almost like a little meatloaf it bakes well and easily holds its burger shape.
Dill, parsley, and cilantro combine with bold red pepper to bring a fresh, fun take on a chicken burger. Tangy slaw, feta, and tzatziki sauce to top.. yes please. Full disclosure, I didn’t make the tzatziki sauce. I have before, but it’s too much work for how good this store bought one is. I get mine at Whole Foods.
The HERBS tho! I swear this is the main component that makes this recipe special. So fresh and flavorful, where as most burgers are heavy and typical this one is far from it. The cilantro, dill, and parsley are a unique combo that adds the best depth of flavor.
Kitchen supplies I used making this recipe.

Chop up the red pepper and herbs, add breadcrumbs or freshly broken up bread pieces. Next, add your eggs, garlic, salt and pepper, and mix. Add in the ground chicken and mix until it’s evenly distributed. These will be chunky burgers, but don’t worry, the egg will keep it together.
Form into burger pattys. I have made these small like little sliders, and this time I did bigger burger like pattys. Both worked just fine.

These don’t have to have a slaw bed in the burger, but I sure love it. I have a go to slaw dressing I will add below if you want to make it for this burger … it is the most heavenly combo.

Sweet & Easy Slaw Dressing
This Dressing goes on any slaw base you want to be tangy and sweet.
Ingredients
- 1 cup Mayonnaise
- 3 tbsp Champagne vinegar
- 2 tbsp White sugar
Instructions

Whip sugar into mayonnaise

Add champagne vinegar
-
Mix until smooth



I grabbed some pita like bread pockets to create a pita burger. I cut it open, stuffed slaw, added the burger, sautéed onions, feta cheese, tomatoes, and finally tzatziki sauce. OH MY GOODNESS, ITS SO GOOD!! It tastes fresh, but also so hearty and filling.

Tzatziki & Feta Chicken Mediterranean Burgers
Chicken burgers full of herb and veggie flavors
Ingredients
- 1 lb Ground chicken
- 2 Red bell peppers chopped
- 1 cup Fresh dill chopped
- 1 cup Italian Parsley chopped
- 1 cup Cilantro chopped
- 1 tbsp Minced Garlic
- 2 Large eggs
- 1 cup bread crumbs or bread crumbles
- 1 tsp salt
- 1 tsp black pepper
Instructions

Add all ingredients to mixing bowl

Mix all ingredients until combined

Form burgers, they can be whatever size you want, just be sure to compact and flatten the burger so it cooks more evenly

Pop in oven at 350F for 20 minutes- flip half way through

Remove from oven, and allow to rest for 5 minutes. Make slaw while you wait.

I added our burgers to pita like bread pouches with slaw, tomatoes, sautéed onions, feta, and tzatziki sauce.

Are you hungry yet? I can not wait to make another one of these. It was a bit much flavor for my kids, the colors, and bold herbs made it not a kid favorite. SO MORE FOR ME!
I hope you enjoy this favorite chicken burger recipe of mine and my husband’s- whatever kids!. He ate his with no bread and more of a salad topper. These would definitely stand on their own as “mini meatloafs” served with mashed potatoes. They could even potentially be rolled into meatballs… hmm an idea I want to try!
